The Farm

The Agri-hostel is part of the “Azienda Agricola Vipiana”, founded in 2013 with the creation of the “Società Agricola Vipiana,” and the purchase of the land and building, both long abandoned. Immediately we began the reclamation of the land: a thorough draining and cleaning of the fields, the recuperation of the olive and fruit trees, and the replanting of new trees. At the same time, we began the refurbishing of the main building, the former “casa Bibi,” that is now the Hostel.

OUR PRODUCTS

All of the products of the farm are certified biological.

Olive oil is the most important product of the farm. There are over 700 olive trees, around 650 currently producing, and around 50 just planted.
Since 2020 the farm has had its own oil press system, so the pressing happens the same day the olives are harvested. The nutritional and organoleptic parameters of the resulting oil are witness to the excellent quality of the oil.

The oil is sold in glass bottles of 500 and 750 ml, one, two and five liters, and in cans of 1,2,3 and 5 liters.

From this year we are beginning to experiment adding fruits and flavors during the pressing of the olives. These oils are sold in 250ml bottles.

Bee breeding and honey

Beekeeping comes from the long experience, though amateur, of one of the partners of the farm. The property, located between cultivated and wild lands, chestnut and oak trees offers a high-quality source for the bees. The resulting honey is a mixture of acacia, chestnut and wildflower, often with overtones of erica. We sell it in jars of 1kg, ½ kg, and on request 250 gr jars.

The orchard

In farming tradition, and in particular the tradition of sharecroppers, each farm always had its own fruit trees. Underneath wild vegetation, ferns and infesting weeds we found an orchard with apricot, cherry, apple, pear, persimmon, hazelnut, walnut, apple and pear.

We worked to restore the orchard and to add new trees: more cherries, apricots, plums, a few almond trees, and even a few peach trees even though they are not easy to grow around here.

We also began a study of local and traditional species, with the idea to add them to the orchard.

Old and new trees are beginning to bear fruit and will always be present on the hostel tables. The fruit collected in the surrounding forest and from higher elevations in the forest, is combined with fruits from the orchard and made into jams and marmalades that you can buy at the farm or directly from the owner.

The vegetable garden

We also have a small vegetable garden where we grow, depending on the season, cabbages, peas, beans, pumpkins, cucumbers, potatoes, peppers, chili peppers, eggplants, lettuce, tomatoes and medicinal herbs. Given the small size of this garden, we use this produce basically in the kitchen to prepare food for the guests of the Hostel.
